2011 Taiwan Culinary Exhibition introduction
I.

100 Years of Culinary Culture
To celebrate the 100th anniversary of the Republic of China, the Taipei Culinary Exhibition this year turns its attention to Taiwan’s venerable and proudly unique food traditions. Listen and learn while savoring some of the flavors that have made Taiwan special across ten decades. A melting pot of various Chinese regional styles as well as indigenous Malayo-Polynesian, Japanese, Western and Southeast Asian influences, Taiwan’s gastronomic zeitgeist has regularly embraced changing tastes and diverse culinary stimuli.

Reminiscing … the Tastes of Childhood: Taiwan Banquet
This exhibit evokes memories of Taiwan banqueting from decades past. See and sample how things were in the “good ole days” and learn about the complex rituals, fengshui principles and other practices involved in creating and presenting a formal banquet meal. The meal at this table takes its cue from the 12 animals of the Chinese zodiac. Other aspects and embellishments highlight once important traditions that are now all but lost. Docents are on hand to explain the underlying meaning of every aspect of Taiwan’s revered banquet tradition.

For Whom the Gong Tolls: Taiwan’s Centenarian Retailers
Purveyors of leaf teas, sweet cakes and hearty meals make up the vast majority of Taiwan’s century-old business establishments. This exhibit introduces visitors to the fine traditions upheld by these long-lived proprietors as well as the hurdles they’ve creatively cleared in order to keep up with changes in consumer preferences and tastes. Docents are ready to provide the inside scoop on featured retailers while you enjoy the myriad photographs and items from days long gone.

Spotlight on the Healthy, Tasty Grouper
Taiwan is world renowned for its farm raised grouper industry. This exhibit focuses on three different commercial grouper species and introduces their use in a variety of tasteful, innovative and healthy dishes. See live groupers, learn about the nutrition content of prepared grouper, and enjoy live cooking demonstrations by local culinary celebrities. Learn all about the amazing grouper – Taiwan’s pride – at this year’s TCE!

III.

The World Culinary Contest
This biannual international event tests the culinary mettle and acumen of eight teams from seven countries and territories. Converging on the TCE, competitors invest their finest ingredients, honed talents and inspired innovations to help push their team to the top. TCE visitors have a front row seat. Come on over for a taste of the action – it’s something you certainly won’t want to miss!

Taiwan’s Righteous Rice
While Taiwan’s rice ranks among the world’s best quality and most healthful grains, local trends favoring other starches and curiosity about other cuisines have left local rice growers with a sticky problem. Island growers have redoubled efforts to grow and deliver the best tasting, best quality rice, while local agriculture promotion organizations have worked to win connoisseurs back to rice and create an enticing new universe of tasteful rice-based dishes. This exhibit highlights the momentum now behind Taiwan rice, demonstrates tasteful recipes and promotes the many benefits of enjoying more Taiwan rice in your diet.

Exceptional Taiwan, Exquisite Food
On the ROC’s 100th anniversary, the TCE turns its lens on our home in Taiwan. This exhibit gives the stage to Taiwan’s many scenic area management administrations. They’ll be more than happy to introduce visitors to Taiwan’s best travel byways. This is the exhibit to get the scoop on the delectable local specialties to be had in and around Taiwan’s most sumptuous scenic locations as well as where to find the best gift foods, souvenirs, accommodations and other travel assistance to make your stay in Taiwan the trip of a lifetime!

Fine Dining Exhibit: Gold Medal Dishes
This exhibit is a perennial favorite of TCE visitors because it is truly the place to witness the cutting edge of gastronomy here in Taiwan. The fourteen exhibiting international hotels and renowned restaurants roll out their finest offerings – delivering culinary perfection couched in elegant settings and scenic locations. Be sure to take advantage of the exceptional discounts on dining and accommodations available exclusively to TCE visitors. VII.

Star Chef Cooking Classes
Star Chef is the brightest diamond in TCE’s star-studded tiara. Every year, popular celebrity chefs take the stage to do their culinary “thing” … cooking up a storm while thoroughly entertaining those who’ve patiently waited to get in. Attendance is limited, so please register for your class or classes of choice beforehand. Well-known television chef personalities offer culinary hints, ingredient tips and perhaps a family secret or two. Participants can also join in a Q&A session and win prizes. No wonder the Star Chef Cooking Class Exhibit is a visitor magnet year after year!

VIII.

The Centennial Food Court – Mouthwatering Snacks and Gifts
The Centennial Food Court brings together the ultimate best of snack culture from around Taiwan. One stroll around the court and you’ll be privy to the finest aromas and flavors to be had in night market snacking anywhere. Be sure not to miss the packaged gifts section where you can sample the wares, take home promotional gifts and purchase delicious packaged foods ready to take home for a friend or to enjoy on your own.
